College Survival: 5 Recipes using Roast Chicken

A roasted chicken is probably one of the best items to buy when you’re looking to make healthy food in your college dorm. It costs about $7 – $10, and will last you an entire week. Chicken is a great source for protein – which is essential for brain function. TIP: Eat chicken for dinner or before bed. It’s more difficult for your body to break down meat, so if you eat it for lunch you may end up feeling a bit sleepy in the late afternoon!

    1. Mama’s Chicken Salad
      • 1 breast and 1 leg of the chicken cut off bone into small chunks
      • 1 tablespoon light (olive oil) mayo
      • 1 stalk of celery chopped fine

      • 1 teaspoon dijon mustard
      • Mix together and eat on whole grain bread
    3. Chicken Rice/Quinoa Bowl

      • 1 cup cooked rice/quinoa (cooked in microwave per instructions

      • 1/2 cup frozen veggies
      • 1 low sodium soy sauce package
      • Mix together cooked rice, veggies and chicken to a microwave safe bowl. Cook on HIGH for 1 minute. Add soy sauce and mix well. Cook on HIGH for one more minute. Add hot sauce!
    4. Healthy Cobb Salad
      • 2 hardboiled eggs de-shelled and sliced lengthwise once then widthwise 3 times (12 half-moons)
      • 1 breast of the chicken cut off bone into small chunks
      • 2 slices turkey bacon microwaved on a paper plate for 3 minutes per side or until crispy
      • 1/2 pint cherry tomatoes cut in half
      • 1 cup washed mixed greens
      • 1 avocado, cut into chunks
      • Dressing: 3 tablespoons cup avocado oil, 2 tablespoons red wine vinegar, juice from 1/2 lemon, 1/2 tsp garlic salt, and a pinch of black pepper
      • Toss all ingredients together and enjoy in a big bowl
    5. Chicken Soup
      • 1 breast and 1 leg of the chicken cut off bone into small chunks
      • 1/2 cups chicken stock
      • 2 tablespoons diced onion
      • 1 cup frozen veggies (carrots, peas, green beans)
      • pinch of garlic salt, pepper, and
      • Put chicken stock, onion and veggies in a microwave safe bowl. Cover with a paper plate and cook on HIGH for 2 minutes. Add chicken and seasoning and cook covered again for 2 more minutes.
