You don’t have to be vegetarian to love these meatballs! They are delicious and gluten free. You can also get your ‘sneaky mama’ on and put some veggies in this recipe. Just add additional quinoa or breadcrumb to make sure the mixture holds up. These are also great finger foods for babies because they’re packed with protein, fiber and antioxidants. Enjoy!
(Dairy & Gluten Free)
- 1 can of organic black beans (15.5oz) strained (not rinsed)
- 2 cups quinoa pre-cooked and cooled
- 1 cup gluten free bread crumb
- 1/2 vidalia onion
- 1 ripe tomato chopped
- 1 egg
- 1 clove garlic
- 1/4 cup fresh parsley
- 1 pinch salt
- 1 tablespoon olive oil
- Medium bowl
- Baking sheet
- Measuring cups & spoons
Be safe! Always wash hands after handing raw eggs – and be careful of little hands near the hot oven!
Step 1: Preheat oven to 350 degrees. Coat baking sheet with olive oil.
Step 2: In blender blend the strained beans, onion, tomato, garlic, parsley, salt, until smooth.
Step 3: Measure quinoa into the bowl and pour in mixture. Add egg and mix well. Add in the breadcrumb and mix again.
Step 4: Use your hands to roll the mixture into small (1 – 2 inches) balls, and place on the prepared backing sheet.
Step 5: Bake for 12 – 15 minutes until golden brown. Remove from oven, let cool and enjoy!
