Microwave: The PERFECT Hardboiled Egg

This recipe is the perfect first recipe in our College Survival Series! It’s quick, easy, and of course healthy! Read below for 5 Healthy Hardboiled Egg Recipes and a Shopping list!

Step 1: Place 2 eggs in a microwave-safe bowl.

Step 2: Use Keurig to make hot water. Pour hot water over eggs until covered.

Step 3: Place bowl with eggs and hot water in microwave and cook on HIGH for 2 minutes. Let sit for 1 minute.

Step 4: Cook again for 1 minute on HIGH and let sit for 1 more minute. USE pot holders to remove bowl from microwave.

Step 5: USE TONGS to place eggs in tinfoil. Wrap and place in mini-fridge until cool.

5 Recipes using hardboiled eggs:

    1. Mama’s Egg Salad
      • 2 hardboiled eggs de-shelled and mashed in a bowl with fork
      • 1 tablespoon light (olive oil) mayo
      • 1 stalk of celery chopped fine
      • pinch of salt & pepper
      • pinch of smoked paprika
      • Mix all together and eat on whole grain bread with a slice of tomato and lettuce… or make… Avocado Egg Salad (bonus!!)
    2. Pickled Tuna-Salad Sandwich
      • Mama’s Egg Salad
      • 1 can of tuna in water drained well
      • 2 teaspoons pickle relish
      • Mix together and eat on whole grain bread with a slice of tomato and lettuce
    3. Egg Lettuce Cups
      • 2 hardboiled eggs de-shelled and sliced lengthwise once then widthwise 3 times (12 half-moons)
      • 2 butter lettuce leaves
      • 1 teaspoon caesar dressing
      • grated parmesan cheese
      • Place eggs on lettuce leaves. Drizzle caesar dressing. Sprinkle parmesan cheese. Eat like a lettuce wrap or taco.
    4. Healthy Cobb Salad
      • 2 hardboiled eggs de-shelled and sliced lengthwise once then widthwise 3 times (12 half-moons)
      • 4 slices turkey bacon microwaved on a paper plate for 4 minutes per side or until crispy
      • 1/2 pint cherry tomatoes cut in half
      • 1 cup washed mixed greens
      • 1 avocado, cut into chunks
      • Dressing: 3 tablespoons cup avocado oil, 2 tablespoons red wine vinegar, juice from 1/2 lemon, 1/2 tsp garlic salt, and a pinch of black pepper
      • Toss all ingredients together and enjoy in a big bowl
    5. Egg Pizzas
      • 2 hardboiled eggs de-shelled and sliced lengthwise once then widthwise 3 times (12 half-moons)
      • Whole grain English muffin cut in half
      • two slices of tomato
      • pinch of garlic salt, pepper, and oregano
      • grated mozzarella cheese
      • Place tomato on English muffin. Evenly top with eggs, seasoning (garlic salt, pepper and oregano), then sprinkle a little cheese. Microwave on HIGH for 30 seconds.
